2 ripe avocados, peeled and cubed1 cucumber, peeled, seeded and cubed3/4 cup low-fat soy milk2 tablespoons cilantro2 green onions, chopped2 cups vegetable brothpepper and salt to taste1 tablespoon lemon juice

Instructions: |
In a blender or food processor blend the first 5 ingredients, until smooth.
Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency. Chill. |
